The recipe below is for a single layer. Double the recipe for a two-layer cake.
For the cake:
15 oz of cooked black beans, rinsed and drained
6 eggs
1 tbsp vanilla extract
1/2 tsp salt
6 tbsp extra-virgin coconut oil
1/2 cup raw unfiltered honey
6 tbsp cacao powder
1 tsp baking powder
1/2 tsp baking soda
For the glaze:
1/2 cup dairy free chocolate chips
2 tbsp coconut oil
INSTRUCTIONS for cake
1. Heat oven to 350°.
2. Grease 8×8 baking dish, or round cake pan.
3. Place all cake ingredients in a food processor and process until smooth.
4. Cook for 30 minutes.
INSTRUCTIONS for glaze: When the cake is cool, place the chocolate chips and the coconut oil in a dish and microwave for 45 seconds or until fully melted), stir, and then pour over the cake.
