Delicious Apple Crisp!

This apple crisp recipe has to be one of the best warm desserts there is! It's healthy, sweet, and indulgent, full of that comforting dessert goodness!
My family wanted a dessert and I needed something quick and easy! 
This satisfied their sweet tooth, and mine, and didn't kill my calories for the day. 


INGREDIENTS
4 apples, peeled (only if desired, I didn't peel the apples), cored and sliced (whatever your favorite kind is)
2 TBSP pure maple syrup or honey - divided
2 tsp cinnamon
1 cup rolled oats
1/2 cup chopped almonds, walnuts, or pecans (whatever your favorite)

DIRECTIONS:
1. Preheat oven to 375 degrees.
2. In a medium bowl, combine the apples, 1 TBSP maple syrup/honey and 1 tsp of cinnamon.
3. Pour into an 8x8 baking dish and set aside.
4. In a small mixing bowl, mix the nuts, oats, remaining syrup/honey and cinnamon.
5. Pour over apples.
6. Bake at 375 degrees for 20-30 minutes, until apples are tender.

Serve with a small scoop of Greek yogurt (flavored with 1/2 tsp of vanilla extract and 1/2 tsp honey).

Clean Eating Chocolate Mug Cake with Frosting

You can have you're cake and eat it too!!
You might never want old fashioned chocolate cake again, once you try this recipe. Yep - it's THAT GOOD!
When I made it, my kids and husband wanted more. So easy and simple to make. I can't believe it took me so long to discover, that I can literally make this individual serving-size cake, in the microwave, in one minute, from start to finish.

INGREDIENTS

Cake:
If you are using the 21 Day Fix meal plan, this cake is one red container, and add your gray for the PB frosting. SO GOOD! And zero guilt. Now I know what you will have from now on if you find yourself needing a sweet treat to follow your dinner or if you have an extra red left over for the day!!!Non-stick cooking spray (I used coconut oil cooking spray from Trader Joe's)

1 heaping scoop or 1 packet of chocolate Shakeology
1/3 cup of almond milk
1 packet stevia

Frosting:
1/2 cup plain green yogurt (I used 2% fat)
1 TBSP PB2 or peanut butter, or almond butter
1 packet of stevia or 1 tsp honey

DIRECTIONS

1. In a bowl, mix Shakeology and almond milk to form your "dough."
2. Spray a large mug with cooking spray (I used a ramikin the first time I made it and it overflowed all over my microwave, so make sure to use a tall mug).
3. Pour "dough" into the mug.
4. Cook in microwave for 45 seconds (check consistency, it might need 10-15 more seconds)
5. To make frosting, combine all frosting ingredients and stir together.
6. When cake is done cooking in the microwave, turn it out onto a plate.
7. Top with frosting and enjoy!
