Clean Eating Mexican Layer Dip

0 years ago, my youngest sister came to visit me and made me this delicious layer dip, AND it was healthier than the usual fat-laden dip, without sacrificing any cheesy goodness or flavor!  The best thing about this, is the versatility. Personalize it any way you want.  Add spicy-ness, omit ingredients you don't like, and you'll get a dish customized to your tastes! I serve it with some organic blue and yellow corn chips and a platter of cut veggies. Perfect to bring to any party! I'm making it today for the Superbowl!

INGREDIENTS
One pound ground turkey breast
1 TBSP chili powder
1 TBSP cumin
2 containers of fresh salsa (usually found in the produce department)
2 ripe avocados, peeled and mashed
16 oz. plain Greek yogurt
1 block of Neufchatel cream cheese (cream cheese with 1/3 less fat)
1 8oz bag of 2% milk shredded cheddar cheese
Chopped scallions for garnish
Chopped black olives for garnish
Chopped tomatoes for garnish

DIRECTIONS
1. Pre-heat oven to 350 degrees.
2. In a skillet on the stove, saute ground turkey breast with chili powder and cumin, until cooked.
3. Stir in one container of salsa.
4. Spread ground turkey/salsa mixture in the bottom of a 9x13 glass pyrex dish
5. In a mixing bowl, combine Greek yogurt and Neufchatel cream cheese until thoroughly mixed together.
6. Spread yogurt-cream cheese mixture over the ground turkey.
7. In same mixing bowl, combine mashed avocado and half of the second container of salsa.
8. Spread avocado-salsa mixture over the yogurt-cream cheese layer.
9. Spread rest of salsa container over the avocado layer.
10. Spread shredded cheddar cheese over the top.
11. Warm the layer dip in the oven at 350 degrees for about 15-20 minutes or until the cheese on top starts bubbling.
12. Sprinkle olives, scallions and tomatoes on top and serve.

You can vary this dish any way you like.  Love olives? Add some to the cooked ground beef.  Love hot and spicy? Use extra hot salsa or add hot sauce to the ground beef. Leave out the avocados if you don't care for them.  Add black beans as a layer to up the protein and fiber.  Enjoy this easy, customizable dish at your next fiesta!
