Today there was a fall chill in the air, and I was looking for something warm and comforting to go with a cup of green tea, that would satisfy my sweet tooth, and still stay within my clean eating meal plan. I also had some overripe bananas to use, and was looking for something different than banana bread. I found these muffins in the FIXATE cookbook.
The greatest feature of this cookbook: It gives the container equivalents for each recipe!!!
These muffins are gluten free, dairy free, and sugar free, but taste like a sweet, bakery muffin! My boys enjoyed these with a cup of hot cocoa!!
Prep Time: 20 min. Cooking Time: 18 min.
CONTAINER EQUIVALENTS (per serving)
1 Purple
1 Blue
INGREDIENTS
2 large eggs
1 cup mashed very ripe banana (about 2 medium bananas)
1 TBSP organic, grass-fed butter, melted
1 1/2 cups almond flour
3/4 tsp baking soda (gluten-free)
1 dash sea salt
1/2 cup chopped apple (about 3/4 of a medium apple)
1 TBSP cinnamon - the original FIXATE recipe does not include cinnamon, nutmeg, or ginger, but it's fall, and these spices make food delicious, and make my house smell cozy, so I decided to include these and live a little!! :)
1 tsp nutmeg
1 tsp ginger
DIRECTIONS
1. Preheat oven to 350 degrees.
2. Prepare nine muffin cups by lining with muffin tin liners or coating with spray.
3. Combine eggs, banana, and butter in a medium bowl. Mix well. Set aside.
4. Combine almond flour, baking soda, and salt in a medium bowl. Mix well.
5. Add almond flour mixture to egg mixture. Mix until blended.
6. Add apple. Mix until just blended.
7. Divide batter evenly between prepared muffin cups.
8. Bake 16-18 minutes, or until golden brown and toothpick inserted into the center comes out clean.
9. Transfer muffins to rack to cool.
