Two Ingredient Bagels

bagels, everything bagels, trader joes seasoning, clean eating, tosca reno, autumn calabrese, 21 Day Fix, 80 Day Obsession
My sister texted me this recipe that she had found online. I wish I could give credit to the person who created this recipe, because it is AMAZING!

The basic recipe can be used for pizza dough, bread sticks, calzones etc. it’s a great basic dough.

I decided to make some bagels with the dough, because I had several bottles of Everything But The Bagel seasoning from Trader Joe's (if you haven't tried this seasoning, it tastes exactly like an everything bagel, and I use it on everything too: eggs, chicken, veggies; it gives them all a zestiness)!

I have included the recipe for JUST baking and skipping the boiling, as well as some tips and frequently asked questions! However, the bagels turn out much better if they are first boiled.

They are delicious sliced to make a breakfast sandwich with egg and cheese, or just with a little butter. Enjoy!

Makes 2 bagels

INGREDIENTS
1/2 C fat free plain Greek yogurt
1/2 C self rising flour
Pinch of salt
1 egg, beaten for an egg wash
Everything seasoning

DIRECTIONS
1. In a large bowl, add yogurt first, followed by salt and self rising flour. Use a rubber spatula to mix together. It will be crumbly at first which is totally normal. Meanwhile bring a large pot of salted water to a boil and preheat over to 450 degrees.
2. Flour your hands and work surface and begin kneading. I knead my dough in the bowl because its less messy. Knead until you can easily form a ball, about 20-30 turns.
3. Cut the dough in half. Roll each section of dough into a long rope about 1/2-3/4″ in diameter. Pinch the two ends together to form a bagel shape (see below for tips).

Boiling Instructions (If you boil first, the bagels will be much larger and fluffier):

4. Carefully drop the bagels into the boiling water using a spatula so it doesn’t break apart. Allow to boil for about 30-60 seconds (the bagel will float to the top) then flip it over using the spatula and boil for another 30 seconds.
5. Remove bagels and transfer to a parchment lined cookie tray (I use Sil-Pat silicone baking mats). 6. Using a basting brush lightly spread the egg wash over the bagel then sprinkle with seasoning of choice.
7. Bake at 450 for 20 minutes (give or take) until golden brown. You may want to broil them to get them a little crispy or crank your oven up to about 550 for 1-2 minutes to brown them a little more.

Baking Instructions Without Boiling:

1. In a large bowl, add yogurt first, followed by salt and self rising flour. Use a rubber spatula to mix together. It will be crumbly at first which is totally normal. (See tips if your dough is too sticky or crumbly). Meanwhile preheat over to 450 degrees.
4. Transfer bagels to a parchment lined cookie tray (I use Sil-Pat silicone baking mats). Using a basting brush lightly spread the egg wash over the bagel then sprinkle with seasoning of choice. Bake at 450 for 20 minutes (give or take) until golden brown. You may want to broil them to get them a little crispy or crank your oven up to about 550 for 1-2 minutes to brown them a little more.

Egg and Cheese Bagel Sandwich
FAQ:
  • If you dough is too sticky add more flour to your hands and your work surface until it is more typical dough texture. Add about a teaspoon at a time and continue kneading until its less sticky.
  • If your dough is too crumbly add more yogurt, a tsp at a time continuing to knead until you reach typical dough texture.
  • If you don’t have self rising flour you can make your own using the following recipe: 1/2 cup all purpose flour, 3/4 tsp baking powder, 1/4 tsp of salt.
  • If your dough is not coming together to form a bagel shape, you may need to knead the dough at the ends together by folding it into itself. This way the dough can stick together. You want the ends to be as stuck together as possible before entering the boiling water. OR you can form a ball of dough, flatten it a bit with the heel of your hand and cut a hole in the middle!
  • If you don’t want to boil the bagels, please see the baking instructions above. They’re just as good, but not as airy and fluffy as typical bagels.
  • Why do I bake mine at 450 instead of 350? When recipe testing, I found the bagels did not bake through when I baked them at 350.
  • Why do I boil them? Traditional bagels are boiled and then baked. It makes them airier and fluffier. They’re just as tasty baked alone, but why not have a better tasting bagel bagel?
  • If you want to make more this recipe is easily doubled, tripled, or quadrupled.
  • If you want to store the bagels they last for up to 3 days in the fridge. I recommend storing them in an airtight ziplock bag.
  • If you want to freeze them, be sure to slice the first, then wrap them in foil or plastic wrap, then store them in an airtight freezer bag.
Olive Rosemary Bagels
TIPS:
  • Drain any extra liquid from the Greek yogurt or your dough will get too sticky!
  • Fage brand makes for the least tangy tasting bagels. Other brands you may find a more sour dough taste.
  • Make sure if you boil your bagels to have the water at a slow boil, not a rapid one or the bagels are more likely to come apart.
  • Like any bagel these are great toasted! Pop them in the toaster to reheat them and enjoy.
  • I've changed up my seasoning: add chopped olives and rosemary to make a savory roll-type bagel that I served with 40 Garlic Clove Chicken Soup.
  • Add a few tablespoons of honey to the yogurt, first, before combining with the flour, and first add cinnamon to the flour before combining with the honey-yogurt. This makes honey cinnamon bagels!

Breakfast sausage crumbles

Turkey sausage crumbles, whole 30, 21 Day Fix, gluten free, paleo, clean eating, tosca reno, autumn calabrese, vanessa.fit, vanessa mclaughlin
This recipe was adapted from Dr. Amy Myers' Book "The Autoimmune Solution" AND "The Whole 30" book. I took both recipes and made a few changes. Below I have the variation I made. I'll also add that you can form this recipe into patties when the meat is raw, and then cook them. Because it saves time, and I don't like touching raw poultry or meat, I cook the ground meat, loose (without making it into a patty), with spices, which is also a time saver. I measure out the quantity per serving, with my 21 Day Fix containers.
Serve with Hearty Sweet Potato Hash.
This recipe is gluten free and paleo.

INGREDIENTS
  • 2 TBSP coconut oil
  • 1 clove minced garlic
  • 1/2 cup minced onion
  • 1 pound ground meant (turkey, pork, beef - I use turkey)
  • 1/2 tsp ground sage
  • 1/2 tsp Himalayan sea salt
  • 1/2 tsp black pepper
  • 1 tsp turmeric (optional - but helps decrease inflammation)
INSTRUCTIONS
1. Heat coconut oil in skillet over medium heat.
2. Add onion and cook 2 mins or until translucent.
3. Add garlic, ground meat, and spices.
4. Cook until meat is cooked through.
5. Serve!

Eggs Benedict - Low Carb, Gluten Free

Gluten free, dairy free, breakfast, 21 Day Fix, Autumn Calabrese, vanessadotfitness, vanessa.fitness, low carb
Perfect for a weekend brunch for me and the hubs, or my lunch during the week!! I love Eggs Bene!! But between the white flour English muffin, Canadian bacon, and hollandaise sauce, the calories can add up, saving it for a treat. This recipe's secret ingredient to bring down the calorie count is riced cauliflower!! Spinach adds some leafy green nutrients and turkey bacon helps with the calories too! AND, it all works without sacrificing flavor and taste!

INGREDIENTS
1 cup riced cauliflower (I bought mine already riced)
3 egg
1 egg yolk
1 TBSP clarified butter - Ghee (or coconut oil to make it dairy free)
pinch cayenne better
4 slices uncured turkey bacon (I buy this pre-cooked)
large handful of baby spinach
Salt and pepper to taste
Cooking spray

INSTRUCTIONS
1. In a bowl, mix together cauliflower and 1 egg.
2. Spray skillet with cooking spray and heat on stove.
3. Place large spoonful of half of the cauliflower-egg mixture in the skillet and flatten to form a patty. Repeat with the second half the cauliflower-egg mixture.
4. Cook for about 3-4 minutes or until bottom of patty is browned. Flip and cook the other side.
6. Place cauliflower patties on a plate.
7. Saute spinach just until wilted. Place spinach on top of cauliflower patties.
8. Heat bacon in skillet or microwave. Place 2 strips on each patty.
9. Poach or cook over-easy style 2 eggs. Place one egg each atop of patty.
10. Using a glass bowl resting on a pan of boiling water (to create a double boiler, or use a double boiler if you have it) place 1 egg yolk, butter, and cayenne better in bowl. Whisk rapidly to prevent yolk from curdling. Cook and whisk for about 2 minutes or until sauce thickens.
11. Drizzle over eggs.

Makes 2 patties or one serving.

**You have the option of adding 1/4 cup of grated cheddar cheese to the cauliflower egg mixture before cooking patties, and using Canadian bacon instead of turkey bacon.

21 Day Fix Pumpkin Pancakes

It's fall, which means pumpkin everything! So, why not some pumpkin pancakes that are healthy, nutritious and delicious?! In my house,  they took the cake.

Made this for my family as Saturday brunch, and it was so good, even my peanut-butter-only eater loved them! This is a decadent treat, BUT falls within the 21 Day Fix eating plan.

21 Day Fix creator Autumn Calabrese and her brother, professional chef Bobby Calabrese, made these pumpkin pancakes live on Facebook, and I happened to catch the video, so I'm sharing the recipe right in time for you to get in on the pumpkin party this fall.

One pancake with the syrup is going to count for 1 1/2 yellows.
Makes: 8 pancakes

INGREDIENTS (for the pancakes):

1 cup gluten-free all-purpose flour
1 tbsp coconut flour
¼ cup pumpkin puree
2 large eggs
1 tbsp baking powder
1 tbsp raw honey
1 cup unsweetened almond milk
½ tsp sea salt
¼ tsp nutmeg
¼ tsp cinnamon
¼ tsp ginger
½ tsp vanilla extract

INGREDIENTS (for the syrup):

½ cup pure maple syrup
¼ oz bittersweet chocolate (chopped)
2 tsp all-natural peanut butter
Preparation:
INSTRUCTIONS
1) Combine maple syrup, chopped chocolate, and peanut butter in a blender and blend for 30 seconds.  Add contents of blender to a small saucepan and heat over medium heat, whisking constantly until chocolate and peanut butter have melted and the syrup is smooth and thick, 1-2 minutes. Kill the heat and set aside.

2) Combine AP flour, coconut flour, baking powder, salt, nutmeg, cinnamon, and ginger in a large mixing bowl and stir to combine.

3) Combine pumpkin puree, eggs, honey, almond milk, and vanilla in a small bowl and whisk to combine.

4) Add wet ingredients to dry ingredients and whisk just until a smooth batter forms.

5) Heat a non-stick, or cast iron pan over medium heat, spray with non-stick spray and wipe out with a clean paper towel so that only the thinnest layer of grease remains.

6) Add ¼ Cup of pancake batter to pan and cook until bubbles in center of cake begin to set, approx. 2 minutes.

7) Flip cake and cook an additional 1-2 minutes until underside is browned. Remove to a plate, then repeat process with additional batter until all pancakes are finished.

8) Top each pancake with 1 TBSP of peanut butter cup syrup and enjoy!

Blueberry Muffins - 21 Day Fix

muffins, 21 Day Fix, autumn calabrese, blueberry,
I LOVE muffins! What's not to love? Sweet, cake-y, delicious! Most muffins are just cake disguised as a breakfast food, but these muffins are HEALTHY, however still a treat!

These muffins are easy and taste delicious, fluffy and cake-like.

This recipe first came from Autumn Calabrese on her social media sites! I made an adjustment or two because the 1st time I made them they were way too moist. She counts them as a treat and, as the founder of the 21 Day Fix, she’s the expert.

CONTAINER EQUIVALENTS:
1/2 blue
1/2 yellow
1/2 purple

NOTE: Some people have trouble with this recipe coming out very dry. I can’t say why. When I make it, following this exact recipe, they are very moist.

INGREDIENTS
1.5 cups almond flour
1/8 tsp salt
3/4 tsp baking soda
1 tbsp coconut oil, melted
2 eggs
3/4 cup bananas, mashed (about 1.5 bananas)
1/2 cup blueberries
1/4 cup Udis Granola (optional)
Cinnamon

INSTRUCTIONS
1. Preheat oven to 350 degrees.
2. Mix together the flour, salt and baking soda.
3. In another bowl, mix together the coconut oil and eggs.
4. Add the egg mixture to the dry ingredients and stir.
5. Stir in the bananas and gently fold in the blueberries.
6. Divide equally into lined muffin pans (makes 9).
7. Top each muffin with granola and cinnamon (optional).
8. Bake for 30 minutes, until toothpick comes out mostly dry.

Banana Oat Pancakes - 21 Day Fix

Autumn Calabrese, Fixate, 21 Day Fix, Breakfast, Containers,
I remember going to listen to Tony Horton (creator of P90X and it's iterations) speak, and he said: "I used to eat pancakes for breakfast. That's butter, sugar, flour, and eggs. I might have well been eating birthday cake, as it has the same ingredients!"

I've always tried to eat healthy, but I realized this was true. Pancakes had the same ingredients as birthday cake! Time to find a healthier version.

These from the FIXATE cookbook are delicious and healthy, and the real test came when my husband (a true buttermilk pancake lover) and my kids tried them. They finished the entire batch; I tripled the recipe.

Autumn Calabrese, the creator of 21 Day Fix and 21 Day Fix Extreme, wrote a cookbook called FIXATE. The greatest feature of this cookbook: It gives the container equivalents for each recipe!
Thank you Autumn Calabrese for providing me with a healthy alternative to cake!

Container Equivalents:
1 yellow
1/2 purple

Makes 8 pancakes, 2 per serving.

INGREDIENTS

1 cup unsweetened almond milk
2 large eggs
1 large ripe banana
1 tsp. pure vanilla extract
1 tsp. baking powder, gluten-free
1/2 tsp. ground cinnamon (we love cinnamon, so I used 1 tsp.)
dash sea salt or Himalayan salt
2 cups old fashioned, gluten free, rolled oats
1/2 tsp. extra-virgin, organic coconut oil
3 cups fresh mixed berries (I made three batches, and used blueberries for one, then 1/2 cup mini chocolate chips for the next batch, and plain for the final batch to please the 3 tastes in my house).

DIRECTIONS

1. place almond milk, eggs, banana, extract, baking powder, cinnamon, salt, and oats in a blender. Blend until smooth.
2. Heat oil in nonstick skillet over medium-low heat.
3. Pour 1/4 cup batter onto the skilled; cook for 2-3 minutes, or until bubbles form around the edges of the pancake. Cook for additional 90 seconds.
4. Continue with the remaining batter.
5. Serve with fresh berries.

Oatmeal muffin cups, baked oatmeal, baked oatmeal muffin cups, gluten free breakfast recipe, dairy free breakfast recipe, gluten free oatmeal, dairy free oatmeal, vanessamc246, vanessa mclaughlin, the butterfly effect, change one thing change everything, no sugar oatmeal, sugar free breakfastSo, easy, portable, with any delicious fill-ins you like, these little oatmeal cups are perfect on busy mornings!  My husband loves them in the summer, because it's too hot to make regular oatmeal, so he puts two in a bowl and pours a little milk over them. I take them to work and eat them as a mid-morning snack. My boys obviously liked chocolate chips in theirs! To make enough for my family all week, I doubled this recipe and stored them in the fridge.

I found this recipe on Pinterest, and modified it a bit.  The recipe below is the original recipe, with notes about my modifications. My modifications make the recipe gluten and dairy free.

If you make them, let me know what toppings you used, and when you eat them!

INGREDIENTS (Makes 12)

1 egg
1 tsp vanilla extract
1 cup unsweetened applesauce
1 banana mashed
1/4 cup of honey (I don't use the honey, because I find the applesauce and the banana make these sweet enough)
2 1/2 cups of rolled oats (I used a mix of gluten free steel cut oats, gluten free rolled oats, brown rice cereal, and buckwheat cereal).
1/8 cup chia seeds (I also added 1/4 cup of ground flax seed, and because of this also added and additional one half cup of applesauce)
2 TBSP ground cinnamon
1 1/2 tsp baking powder
1/2 tsp salt (I used pink sea salt)
1 1/4 cups milk (I used almond milk)
Toppings - I used blueberry, chocolate chips, and then cherry almond (I used frozen blueberries, mini chocolate chips, and unsweetened dried cherries along with raw almonds).  You can used any you like: raisins, cranberries, nuts.  There are so many options.
