Day 2 observations:
Pros:
- Lost 1 lb in the first day
- Lots of food! Not hungry
- No cravings (except for gum)!
- Digestion is already improved
- Tummy feeling and looking flatter
Cons:
- Have to pee every 5 minutes
- Grumpy cuz I can't chew gum - this was my stress reliever
- Tired (dozed off in the middle of the day today, and could barely read to my son when we sat down with a book!)
As I'm eating all this food: big bowl of oatmeal for breakfast, huge salad for lunch, filling tacos for dinner, I don't think I've ever felt more in control! I'm not craving sweets or pizza or any junk!! I just want to put natural, fresh, whole foods in my body!
The only thing I REALLLLLLY want is chewing gum. Most people miss coffee, but I slowly weaned myself off that before I started, on purpose so I wouldn't get a headache. I knew I chewed too much gum, and even once tried decreasing the amount I chewed!! Guess I needed something strict to make me kick the habit!! A few times today, I almost caved and thought "well, one piece of gum won't hurt." But then I looked at the bracelet on my arm, and thought of my reasons WHY I decided to do this, and I didn't give in.
I also taught two fitness classes, but still went for a short walk with my doggie (Indiana Bones, AKA "Indy.") She loves being outside and it was wonderful to get out and soak up the beautiful spring day!! !
Today's menu:
8:00 am: 24 oz water with Mineralize and Optimize supplements
30 minutes later: Breakfast - oatmeal with blueberries, yogurt with honey
Thoughts: I LOVED this breakfast!!! It was decadent. I sprinkled cinnamon on the oatmeal, and while the menu specified maple syrup, I substituted honey, because I don't like maple syrup.
2 hours later: Mineralize and Optimize supplements
30 minutes later: Lunch - Greek Salad topped with Salmon
Thoughts: this recipe calls for a FULL HEAD of romaine lettuce!!! Sooooooo, I would say it's filling!!
2 hours later: Super Greens powder with water
30 minutes later: Snack - Vegan Caffe Latte Shakeology + 1/2 banana
This is the new vegan cafe latte flavor! I'm loving it! I had it with 1/2 a banana and almond milk as my extra calories for my two fitness classes today.
2 hours later: Mineralize, Optimize, Revitalize supplements
30 minutes later: Dinner - Southwestern Veggie Taco
Thoughts: This dinner was delicious and filling!! The recipe (which I will share below) calls for corn, but I forgot to buy it, so I had 2 corn tortillas instead....I can't eat just one taco, can you?!!!
I drank gallon of water today, so I'm definitely hydrated, which is important with my fitness classes, and as weather temps outside are increasing (yeah)!!
It's the end of day 2, and I am so tired, my eyes are heavy as I write this. LOL! But, I've logged the day, and now it's time for bed for me! Stay tuned for day 3!

Southwestern Veggie Taco Recipe
1/4 medium avocado mashed
2 TBSP pico de gallo (salsa)
1/2 cup cooked black beans
3/4 cup cooked brown rice
1/4 tsp olive oil
1/4 tsp cumin
1/4 tsp chili powder
1/4 tsp coriander
1/4 cup corn kernels (I messed up and forgot to buy them)
2 six-inch corn tortillas
1. Combine mashed avocado and salsa, mix well; set aside.
2. Place olive oil, brown rice, beans, corn, and seasonings and heat.
3. Place black bean mixture on corn tortillas and fold.
4. Serve with avocado-salsa mixture.
**this is one serving
